Healthy Roast Vegetable Soup

Updated: Aug 24, 2023

This delicious, healthy roast vegetable soup is so satisfying, it's definitely a favourite of ours in the cooler weather.

I love that it uses some veggies that I would rarely cook with otherwise. That means a more diverse range of nutrients and our gut bacteria thrives on that diversity. Happier gut bacteria = healthier you.

This soup would go perfectly with my Healthier Sticky Date Pudding with Tahini Caramel on a cold night :)

Delicious vegetable soup packed with flavour and nutrients.
